Justin Smillie, whose cooking is both urbane and rustic in sensibility, first gained national attention at Il Buco Alimentari by earning three stars in the New York Times. In 2014 Smillie went on to open Upland NYC on Park Ave. and Upland Miami in SoFi. In 2015, Smillie published “Slow Fires, Mastering new ways to Braise, Roast and Grill.” SlowFires is now brought to life as a mobile wood-fired oven where pizzas are perfectly blistered, savory meats are smokey, unctuous and crackling. Whole fish are blistered over glowing coals, and vegetables are slowly roasted by the embers. SlowFires brings the skillful execution of wood-fired cooking techniques to your every occasion.
